The classic apple-pear combo isn't just for dessert...
1 1/2 ounces Venus Gin Blend No. 01
3/4 ounce lemon juice
3/4 ounce pear syrup*
1 dash apple bitters
Combine all ingredients in a shaker, fill with ice and shake until chilled. Strain into a coupe and garnish with a lemon wheel.
*Pear syrup: combine equal parts sugar and water in a small saucepan over medium heat. Cut a pear into cubes, add to the pan and simmer stirring often for 10 minutes or until sugar is dissolved. Allow to cool and strain into a glass container. Store refrigerated.
